Strawberry Balsamic Pork Loin

Serves 4-6

  • 1 jar Pope’s Strawberry Balsamic Sauce
  • 3-4# Boneless pork loin
  • 1 T Olive oil
  • Salt & pepper

In a resealable plastic bag, combine pork and 6 oz of Pope’s Strawberry Balsamic sauce, marinate 2 hours in a refrigerator. Remove pork from the marinade, and pat dry, season with salt and pepper, while oven preheats to 350º.  In an oven-safe pan, heat olive oil over medium high heat, sear pork until brown on all sides. Remove from heat, cover with a tent of aluminum foil place in oven on the middle rack, roast pork to 155º F (slightly pink), about 1 hour. Transfer pork to a cutting board, cover loosely with foil and let rest, about 5 minutes. While the pork rests, place remaining Strawberry Balsamic Sauce in a small pot and reduce to a slightly thick sauce. Slice pork on the bias, drizzle with sauce and serve.
